Banana Chocolate Chip Muffins Recipe

I have a new found love for baking.  But I’d be lying if I didn’t say it was mostly because of how my condo smells after I’m done.  I think one of the reasons I gravitate towards baking is that it is so methodical.  There are exact measurements which all come together perfectly to create something delicious.

My latest experiment was Banana Chocolate Chip Muffins.  I had bananas that were too ripe to eat so instead of making banana bread which is what I usually do, I decided to try something different.  All I can say is that my co-workers were very pleased the next day.  Check out the recipe below for an easy and relatively healthy way of making a nice sweet treat.  Pro Tip: someone also recently told me to swap the brown sugar with coconut sugar.

What you Need:

2 cups whole wheat pastry flour or whole wheat flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/3 cup honey
3 tablespoons light brown sugar
2 large eggs
3/4 cup full fat plain greek yogurt
1 cup mashed ripe banana
1/4 cup melted coconut oil
1 cup chocolate chips

Instructions:

  1. Preheat your oven to 400 degrees
  2. Line a 12 cup muffin tin with paper liners
  3. In a medium bowl combine the flour, baking powder, salt and  cinnamon
  4. In another medium bowl, whisk together the honey, sugar, eggs, Greek yogurt and mashed bananas until they are full combined
  5. Add the dry ingredients to the wet ingredients and using a rubber spatula mix until the ingredients are JUST combined, you don’t want to over mix.  You’ll see just a slight left over of dry ingredients

6. Fold in the melted coconut oil and mix until combined
7. Fold in the chocolate chips, mixing until combine
8. Using an ice cream scoop if you have one, divide the batter evenly among the muffin tins

9. Bake for 18 minutes or until the tops are puffy and browned.  A toothpick can be inserted and should come out clean or with just a few moist crumbs
10. Cool for 5 minutes before removing from the pan and transferring to a cooling rack
